3Sixty recently launched their new menu, with a 10 course tasting menu to selected media. Mzansi Life & Style was lucky enough to be part of this selection.
Blake Anderson was appointed as the Complex Executive Chef of Gauteng’s premier entertainment destination, Montecasino, in October last year and, having spent the first six months settling in to the challenges of running a 24/7 operation, has now turned his significant culinary talents to reinventing the menu of the property’s trademark restaurant on the casino floor.
Here is a summary of these ambrosial delights, which we had the honour of watching the chefs prepare, at the 3SIXTY’s chef’s bench, with a birds-eye view of the kitchen.
Starters:
We started with an Amuse Bouche of tomato gazpacho.
This was followed by the Pea and Artichoke Miza: this consisted of crushed peas, yoghurt labneh, grilled artichoke and mint served with tortilla crisps.
Main courses:
Prawn Thermidor Croquette: consisting of prawn, tarragon and dijon mustard, infused croquette, deep fried and served with parmesan cheese. Prawn tail cerviche, tomato, parsley lime salsa.
Confit Duck Tortellini: consisting of deep fried confit duck leg tortellini, Asian infused mushroom ragout, marinated cucumber and carrot ribbons, hoisin and duck broth and micro herb salad.
Griddled Corn Chicken: consisting of Amasi poached chicken lollipop, panko crumb, sweetcorn puree, black pepper micro popcorn.
Vegetarians are not forgotten on 3SIXTY’s new menu – light and fluffy herb gnocchi with basil pesto cream, braised heirloom tomatoes and wild rocket is served with an unusual ‘arch’ of grilled parmesan cheese crumb bake.
Herb crusted salmon: consisting of herb crusted salmon, Morrocan spiced couscous, lemon creme fraiche, parsley pesto and micro vegetables.
Desserts:
Cookies & Cream: white chocolate cheesecake with Oreo crumb, Oreo macaroon, salted caramel and dark chocolate gelato.
Indian Summer: consisting of cardamon, orange and cinnamon infused sago pudding, grilled and bruled pineapple dusted in masala, pickled and candied kerala style gooseberry, coconut cream sorbet.
Friandise: Honey chocolate truffles
The 3SIXTY menu is a journey for the senses – a tasting menu served as a six-course, eight-course or 10-course, with the option of wine pairing.
